Chef Marlene Myrie is a caterer, personal chef, food writer, and cookbook author living and working in Los Angeles, California.
According to Chef Marlene, “The story of the food I prepare is the story of my journey through life. I was born and raised in Limon, Costa Rica to second-generation Jamaican parents, and I grew up surrounded by my Jamaican grandparents.”
Chef Marlene spent her younger years sharing a very special relationship with her Granny, who both inspired and taught her to cook. “As she lovingly shared her cooking techniques with me, I sought to replicate not only her techniques but also her values and those of our family.”
Chef Marlene learned the value of hard work and discipline early in life and to never compromise those principles.
Coming to America as a young adult armed with her “Caribbean Flava” and eager to learn more about food and its preparation she had the good fortune to land in Brooklyn, New York, where aromatic foods permeated the air and Reggae music pulsated through the streets. Infusing those scents and sounds into her food, she soon embraced it as her second home.
Always fascinated by the kitchen, where she feels most comfortable Chef Marlene is free to produce, twist and add new dimensions to recipes. By adding her own unique spin and constantly exploring new avenues of taste her cuisine is always evolving. She takes great pride in the creative process because her true motivation is not money, but a desire to excite the tastes of her guests. She considers money merely the by-product of her passion for cuisine.
“In retrospect, I just figured out a few years ago, why it is that I was never able, and still am not able to pass a page in a magazine with the display of a simple green salad. For me there is something magical about the taste of food, especially when it is well presented.”
After moving to Los Angeles she discovered the wonderful flavors of Cajun/Creole cooking.
Always excited by food, she began experimenting and fusing the flavors of Caribbean cuisine with some of the techniques and methods used in Creole dishes. “After being exposed to Creole cooking, I was able to capture the similarities in both cuisines. I formed the Caribbean/Creole Concept not to merge both but to enhance each on its own merits. Out of those experiments, I created what I call Flavacooks, a Caribbean/Creole Concept.”
Twenty-six years later after countless plated dinners, a multitude of clients, hundreds of weddings, dinner parties, family reunions, birthday parties, movie shoots, and commercials, a handful of restaurants, and every celebration in between she has many stories to tell and a legion of devoted fans. More importantly, Chef Marlene has the desire to share that culinary journey with her readers.
Early in 2012 she released her first cookbook, Chef Marlene is Cooking with Flava: A Caribbean/Creole Concept available as an ebook at Barnes and Noble and Amazon. Fans made her book an Amazon’s bestseller in both Caribbean and Creole cookbooks.
Never one to rest on past successes, Chef Marlene has an ambitious agenda for the future. A second cookbook is already in the works as well as her delicious new “Flava by Miss Ella” sauces gearing up for wide distribution. She is currently in discussions about her own cooking show and believes the possibilities are endless.
“I have made a significant impact in this industry and I am proud of the doors I may open for others in the future.”
