So, you’ve been told to do an elimination diet. Or, you’ve been told to go gluten free. Maybe you’ve been told you have food allergies or sensitivities. You’ve been told to stop eating this and to stop eating that. You’ve been told, you’ve been told, you’ve been told!

I, too, was told, but no one bothered to tell me in a specific fashion what could replace the foods I enjoyed. When an elimination diet and its results shook my world, I began experimenting to create recipes that would suit my new lifestyle. Of course, as it turned out for me after 30 days turned into years, my new lifestyle prohibits gluten, eggs, dairy, sugar, and most oils. So, as you can imagine, my experiments in food preparation have taken some long, winding roads to find tasty recipes within severe restrictions.

If food allergies or sensitivities are part of your life, you know gluten free, egg free, dairy free and sugar free baked goods are difficult to find and/or make. Those types of recipes are even harder to find! These amaranth cookies are a good start in helping to replace the baked snack foods to which you may have been accustomed. Cookies simply don't come any more "elimination diet allowed!"

This Elimination Diet Recipe Series provides some clues of how to make it through an elimination diet or even the rest of your life, avoiding foods you cannot or should not eat. Each recipe is offered separately to avoid the more costly cookbook approach, in which you get a lot of recipes that you cannot use or that do not interest you
